The Covered Dish: Hippy Juice

I never thought I would receive some many inquiries this past week from readers. The frequently asked question was:  ‘What is Hippie Juice’?  Well, for starters it is a yummy summer drink that you can serve by the pitcher for your patio & pool parties.  Not only am I going to give you ‘Hippie Juice’ this week, I’m also going to share a nice ‘Summer Poolside’ drink shared by a Northeast Missouri reader and my brand new recipe for Rum Chata.

As you review each drink you’ll also find that each can be made non-alcoholic.  I used the ‘Hippie Juice’ at a recent party.  I had quite a bit leftover so we just kept drinking on it until it was gone!  Our friends from Platte City got ready to make their usual vodka tonics and instead they enjoyed ‘Hippie Juice’.   If the ‘juice’ isn’t as sweet as you like it just add additional pink lemonade mix.  Hopefully you’re can of lemonade mix will come with a scoop inside.  When I was making my ‘juice’ I discovered I didn’t get a scoop in the can, so I just had to guess.

The summer poolside beverage will also be delicious without the alcohol.  Oddly every time I google this recipe it comes up with no amounts on the Pineapple Coconut Rum. I’ve consulted a few other pitcher drink recipes in order to get a starting place for you.  I would recommend you start with about 1 1/4 cups of the rum and you may make it all the way to 1 and 3/4ths before you are done.

To enjoy both of these drinks I would suggest making a few homemade ice cubes using the lemonade mixes.  This will keep the beverage from diluting down during days of 90+ weather.  Also grab a few simple items to embellish your drinks:  Fresh mints, lemon slices, fresh pineapple, and in the case of the ‘Hippie Juice’ even a few strawberries.

My third beverage started with a basic ‘Horchata’ recipe and then I pushed it a bit more until I had a good base for my own Rum Chata.  Typically Rum Chata sells for around $23-$27 a bottle.  Rice milk will be our foundation, and I am “NOT” making it from scratch.  Taste tests reveal that purchased rice milk is equally as good and it saves lots of time.  At my grocery store I usually have one choice when it comes to Rice Milk.  For those who haven’t tasted this milk before, it is delicious!  And again, this is great without alcohol added.

Hippie Juice

1 cup watermelon vodka

1/3 cup triple sec

1/3 cup Coconut Malibu Rum

4 scoops dry pink lemonade mix

4 cups water

Strawberries, lemons and mint to garnish.

Summer Poolside Drink

1 can pineapple juice, (46 ounces)

1 cup regular dry lemonade mix

2 cups cold water

2 cans of Sprite Soda Pop

Pineapple Coconut Rum

 

Prepare with no alcohol or start by adding 1 1/4 cups of the rum.  Gradually increase to as much as 1 3/4 cups of rum. (Suggested sip and taste method.)

 

Homemade Rum Chata

2 cups rice milk

1/2 cup white sugar

2 small cinnamon sticks

2 cups heavy cream

1 teaspoon vanilla, Madagascar, if available

1 ounce vodka

2 ounces Light rum

Yields:   (4) eight ounce glasses

 

In a small saucepan combine the cinnamon sticks, rice milk and sugar.  Heat until the sugar is totally dissolved.  Remove from heat and stir in the vanilla and heavy cream. (I like to leave mine set for a while with the cinnamon sticks included.) Then I remove the cinnamon sticks and bottle in a nice container for the refrigerator. (Even if it is a quart jar!) For each glass use 1 cup of the base recipe and add the 1 ounce of vodka and 2 ounces of light rum.  Stir to blend; serve over ice with a sprinkling of cinnamon or nutmeg over the top.  Could also place a fresh cinnamon stick in the beverage.
