The Covered Dish: Chili cheese squares

As avid Chiefs fans our household was crying the blues this past Sunday. How did we celebrate the game time? I wrote a new appetizer recipe and made homemade pizzas. It was a fun evening, just a sad outcome.

With the Super Bowl breathing down it’s time to figure out a good menu for this great sports day. My thoughts are that I feature appetizers the next couple of weeks as we gear up to party. I can’t share my new one with you until the end of February, but I do have a favorite for you this week. Chili Cheese Squares always delight my guests whether I serve them for breakfast, brunch, lunch or snack. My recipe originated with Sharon Short, from Platte City, Missouri. Since I started making it I’ve seen other varying styles of the same dish. One night we were having biscuits and gravy for supper so I used the cheese squares as the appetizer.

As a host you could make a couple of pans varying the ingredients slightly. Cut and platter, holding them in an oven warmer. I’ve seen my staff pop these little squares cold with no complaints.

If I hadn’t known better I would have thought my mother read my column last week while I was writing it! When we talked on the phone she mentioned how she had made a large stock pot of vegetable soup. She sent some to our friend, Francis, and also to our friends, Randy & Brenda, last week. Randy showed up to plow their driveway later in the week. Thank you Randy, we appreciated your kindness. I got all excited when I heard mom’s story because it’s what makes the world a better place.

Our family spent 3 days together this past weekend after the snowfall. It was outstanding family time. Too cold to do much. For those of you in Kansas and Northern Missouri we received 3 – 3 1/2 inches of snow in Branson West Saturday the 19th. In Branson there was only a little skiff. 3 1/2 inches is a lot when you live in the Ozark Mountains; few guard rails, all the hills and switchbacks. Heck we can’t even get out of our driveway! With 4-wheel drive you can usually make headway. (Yes, we have 4-wheel drive!)
The recipe this week is truly quite simple and one you will find yourself reaching for time and time again. Working moms might bake these the night before and serve them re-warmed, in the microwave the next morning.

Chili Cheese Cubes

8 eggs
1/2 cup flour
1 teaspoon baking powder
3/4 teaspoon salt
3 cups shredded Monterey Jack cheese
1 1/2 cups cottage cheese
2 cans mild green chilies drained and chopped

Beat eggs until light, add flour, baking powder and salt to the eggs.
Fold in cheese, cottage cheese and chilies. Bake in a glass dish (9 x 13) for approximately 40 minutes at 350 degrees.

Allow to stand for 10 minutes and cut into bite size pieces. Usually I get 30-40 squares from each pan.
