The Covered Dish: Coconut Blender Pie

If you get in a quandary about a dessert this spring I highly recommend the

delicious blender pies.  Place everything except the coconut into the blender and

then stir the coconut in by hand, poof, you’ve got a great pie.  However the best

part is when unexpected company pops over you can have a pie made and baked

within 60 minutes.  The mess is kept to a bare minimum and you can tidy the

house while the pie bakes!

This year our Easter menu was pretty traditional:  Ham, scalloped potatoes,

creamed peas, corn, deviled eggs, hot rolls and dessert.  Usually I invite friends or

family over to join us at our table.  This year thanks to a lovely cold I refrained

from additional guests.  Instead I grabbed a good book and just enjoyed spending

the Sunday with my family.  Something I seldom get to do since I work weekends.

The Ozarks certainly had their share of rainfall this week.  The wonderful part is

the fact that the lake is full again and the fish are biting!  Yes, one of our local

anglers was on the radio this week and he said all the rains had warmed the

waters and the fish were really biting.  I haven’t told my family but I’m seriously

thinking about picking up a license Monday and putting my pole into the

festivities. Yes indeed, a skillet of crappie would be delicious.   In about 3-4 more

weeks spawning season arrives and opportunities will be even better!

My new cookbook, ‘Everyday Comfort Foods’ is going to get my full attention this

coming week.  I’ve already been asked to do this or that and I can’t believe it, but

I said, ‘Nope I’ve got to work on the cookbook.’  School has entered both baseball

and track season and our son, Phillip, is in track.  Phillip’s first love is football, but

he basically signed on to keep himself in shape.  Yeah Phillip!

The lawnmowers have been running in our neighborhood and the first drift of

fresh cut grass has reached my nostrils.  If the rain doesn’t put a damper on things

I’m going to put a few new bulbs in the ground so I can enjoy abundant flowers

throughout the summer months.   With a light frost last night we still haven’t

pulled the extra protection away from our outdoor plants.  Most of our neighbors

have been a bit more zealous and have re-mulched and everything.  We go at a

bit slower speed, besides ‘yellow’ season is headed our way in a couple more

weeks.   After all the ‘pollen’ everything has to be cleaned & washed all over

again.  We even cover our lawn furniture during these 3-4 weeks.

Enough chatter, I need to go clean up the supper dishes and organize myself for

tomorrow.  I hope your Easter was a blessed day and you spend it surrounded by

Coconut Blender Pie

2 cups milk, usually I use 2%

3/4 cup sugar

1/2 cup biscuit mix

1 cup baker’s angel flaked coconut, I prefer sweetened to not

4 large eggs

1/4 cup butter, melted

1 1/2 teaspoons vanilla

Combine milk, sugar, biscuit mix, eggs, butter and vanilla in the electric blender,

cover and blend on low for 3 minutes.  By hand, stir in the coconut.  Pour into a

greased 9 inch pie pan.  Let stand about five minutes and then bake at 350

degrees for approximately 40 minutes.  The pie is done when a knife inserted in

the center comes out clean.  Serve warm or cold.  I like to serve this with a small

dollop of whipped cream and a sprinkling of cinnamon or nutmeg on top.  You

could also toast additional coconut and sprinkle it over the whipped cream.

Serves 6-8 persons.

This is a fast pie to prepare for unexpected guests.  The dessert is very much like a

custard pie.
