Basil Cream Chicken

Ingredients:

  • 1 pound boneless, skinless chicken breast halves
  • 1/4 cup milk
  • 1/4 cup breadcrumbs
  • 3 1/2 tablespoons butter
  • 1/2 cup chicken broth
  • 1 cup whipping cream
  • 3/4 cup grated parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/8 teaspoon course-ground black pepper

Directions:

  1. Place milk and breadcrumbs in separate shallow bowls.
  2. Dip each piece of chicken in the milk, then coat with the breadcrumbs.
  3. In a skillet over medium heat, fry chicken in butter on both sides until golden brown and juices run clear.
  4. Remove from skillet and keep warm.
  5. Add the broth to the skillet and bring to a boil over medium heat.
  6. Stir to loosen browned bits from the pan.
  7. Keep stirring and add the whipping cream .
  8. Boil for 1 minute, then reduce heat.
  9. Add the parmesan cheese, basil & black pepper.
  10. Simmer and stir until heated through.
  11. To serve, pour sauce over the chicken.
