Delicious Cherry Pie

Ingredients:

  • 1 cup sugar
  • 3 tablespoons minute tapioca
  • 2 cans tart, pitted cherries
  • ¼ teaspoon almond extract
  • Butter
  • Pastry for 2-crust pie

Directions:

  1. Mostly drain the cherries, reserving ½ cup of the juice
  2. In a large bowl, mix the sugar and tapioca
  3. Add cherries, juice and almond extract
  4. Let mixture stand for 15 minutes
  5. Prepare pie crust
  6. Pour the cherry mixture into the crust
  7. Dot with butter before adding the top crust
  8. Place foil strips around the edges of the crust
  9. Bake at 425 degrees for 35 minutes
  10. Remove foil and reduce heat to 375 for 30-40 minutes
