Ham-Bean Soup is an easy slow cooker recipe for a delicious and hearty, (8) ingredient soup. It takes only (15) minutes to prepare and just over (5) hours to cook. Ingredients include: Ham, white beans, celery, carrots and onions. This is also a healthy, low calories, low fat, low cholesterol, low carbohydrates, low sugars, diabetic-friendly and Weight Watchers (6 SmartPoints), (6 PointsPlus) recipe. Makes: (6) servings. Ham-Bean Soup will be loved by all of your family, friends and guests.

Prep Time: 15 Minutes.

Cooking Time: 5-1/4 Hours.

INGREDIENTS:

(1 lb.) Smoked ham shank
1/2 cup chopped carrots
1/2 cup chopped celery
1/2 cup chopped onions
2 (15 oz) cans Great Northern beans, drained, rinsed
5 cups low-sodium chicken broth
1/2 tsp salt
1/2 tsp ground black pepper

DIRECTIONS:

1. Spray a 3-1/2 to 4-quart-size slow cooker with cooking spray. Place ham shank in slow cooker; add in all remaining ingredients.

2. Cover; cook on LOW 5 to 6 hours or until ham shank is tender.

3. Remove ham shank; cut into small pieces. Stir into slow cooker. To thicken: Mash some of the beans with a fork.

TIP:
Optional: For more flavor, add 1 bay leaf the last hour of cooking time and remove bay leaf when finished cooking.

Yield: 6 Servings.
