Ingredients:

  • 1 cup diced potatoes (1 medium potato)
  • 1/2 cup diced onions (1/2 medium onion)
  • 1 cup diced red bell peppers (1 medium pepper)
  • 1 cup chopped fresh spinach
  • 8 eggs, beaten
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon ground black pepper
  • 4 ounces 2%-fat cheddar cheese, shredded
  • 8 (8-inch) whole wheat tortillas
