1 ½ cups unsweetened coconut milk
1 tsp. coconut oil
1 heaping tsp. peeled and finely chopped fresh turmeric, or ¾ tsp. ground turmeric
1 heaping tsp. peeled and finely chopped ginger
½ tsp. vanilla extract or one ¼ vanilla bean, scraped
1 tsp. honey
¼ cup frozen pineapple, no sugar added
Process the pineapple, coconut oil, turmeric and ginger until blended. Heat the pineapple mixture, coconut milk, honey and vanilla until just simmering. Strain the mixture back into the blender and process until frothy.
Carefully pour into warm mugs and serve.
The pineapple mixture can be made in larger batches and held in an airtight container in the fridge for up to 3 days. Simply heat with the coconut milk and process to order.
