Get ready for simplicity this week as I share one of my favorite summertime salads. I had actually forgotten about it until our son’s significant other, Paige, called and asked me about it. Talk about refreshing and full of summer, this is it. The fun thing about this salad is how easy it is to switch the focus out to strawberry or other fruit flavors.

You will notice I have not given any amounts for the ingredients. That’s because I have no idea how many you are making! A box of tender greens and spinach blend will do about 10 salads normally. The dressing is not from scratch, but it is one that will become an all-time favorite, once you’ve discovered the flexibility.

On the way home from Kansas City this week I had a Wendy’s summer strawberry and chicken green salad. It is definitely one of my favorites. My salad is very much like it without the chicken….hm…is chicken a possible addition, of course!
The nuts were toasted almonds that too is another doable switch around. The strawberry salad had a ‘champagne’ dressing. There are ‘champagne’ dressings out there, but the poppy seed will work.

The reason why I like the ‘Brianna’ poppy seed dressing is because it is white and it flatter the fruits so nicely. Many poppy seed dressings lean towards a yellow tone, etc. When you are selecting your dressing be sure and look at all the flavors ‘Brianna’ sells. You will find the dressing at most grocery stores and large stores like Target and Walmart.

On the way home we splurged in the Clinton area and purchased some beautiful fresh peaches, not only for this salad, but for a fresh fruit pie and homemade peach conserve I plan on making next weekend.

We returned from the whirlwind trip to find our garage refrigerator had croaked.
Everything was a total loss, including all my butter! Now we’re weighing in on the replacement frig. Looks like the main kitchen is going to get the brand new purchase.

Fresh Peach Salad
5 oz. organic tender greens & spinach blend
1-2 washed, sliced fresh peaches
Asiago or Feta cheese
Thinly sliced red onion, (soak in ice water 30 min. before using)*
Toasted Walnuts, Pecans or Almonds
Dried Cranberries
Brianna Poppy Seed Dressing
Crumbled Cooked Bacon or Grilled Chicken, if Desired

On a chilled plate sprinkle down greens, onion, nuts, peaches, cranberries, bacon, and/or chicken. Lastly sprinkle the cheese over the top. (Goat cheese is another good cheese choice.) Place dressing in a small pouring pitcher for serving. Embellish with fresh bread and fruit muffins.

*By soaking the red onion some of the power/heat is removed from the onion.
