Pumpkin Bread Recipe

In the spirit of fair, I am going to give you a recipe that I entered as a 4-Her back in the day. This recipe is more of a fall recipe, but it sure is a great one! I entered this a few times in the fair and received a purple and even a level champion! I hope you enjoy it:

3 c sugar
2/3 c water
16 oz can pumpkin
2 tsp baking soda
1/2 tsp cloves
1 c vegetable oil
4 eggs
3 1/2 c flour
1 tsp salt
1 tsp nutmeg
1/2 c chopped nuts

Topping:
1/2 c packed brown sugar
4 T flour
4 T soft margarine or butter

Heat oven to 350 degrees. Grease and flour bottoms only of 2 9”x5” loaf pans. In large bowl combine sugar, oil, water, eggs and pumpkin. Beat 1 minute at low aped. Lightly spoon flour into measuring cup; level off. Add flour, soda, salt, 1 tsp cinnamon, nutmeg and cloves; blend at low speed until moistened. Beat 1 minute at medium speed. Stir in nuts. Pour into prepared pans. In small bowl combine all topping ingredients until crumbly; sprinkle over batter. Bake for 60-75 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove from pans. Cool completely on wire racks. Makes 2 loaves.

Smaller pans, bake 45-50 minutes and cool on wire racks.
