HCC MEN’S BASKETBALL SEASON COMES TO AN END IN NJCAA QUARTERFINALS

Held to a season-low offensive output by a stingy Georgia Highlands defense, the No. 23-ranked and sixth-seeded Hutchinson Community College men’s basketball team saw its season close on Thursday in the quarterfinals of the 2015 NJCAA Division I Men’s Basketball Tournament at the Sports Arena.

Cinderella Georgia Highlands eliminated the Blue Dragons 64-59. The Chargers advance to Friday’s second national semifinal against No. 2 Northwest Florida State.

The Region VI champion Blue Dragons end their season at 29-7. The 29 wins tie for the seventh most wins in Blue Dragon basketball history. The 36 games played tie for the fifth most played in a season.

Flaky Buttery Biscuits

Biscuits are super easy to make, and don’t take much time either. Please, if you’ve never made biscuits from scratch, you owe it to yourself to give this a try.  I promise these are better than any biscuit out of a can.

Ingredients:

  • 1 stick of butter
  • 2 cups all purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons sugar
  • ½ teaspoon salt
  • ¾ cup milk
Prep Time: 15 Minutes Cook Time: 14 Minutes Yield: 12 biscuits

Preheat your oven to 450 degrees.

First, measure out the flour into a mixing bowl.

Then add the baking powder.

And the sugar.

And the salt.

Mix all the ingredients together, and then add the stick of butter. And I mean real butter- lovingly provided by happy dairy cows. (No margarine please – this is country cooking, and around here, margarine is just stiff vegetable oil in stick form.)

Using a pastry blender, cut up the butter into the dry ingredients. If you don’t have a pastry blender, you can use a fork, or 2 butter knives.

Keep cutting the butter until you don’t have any pieces bigger than a small pea.

Next, pour in all the milk.

Using a fork, stir the mixture until all of the dry ingredients are absorbed by the milk.  Don’t overdue the stirring – when all the dry stuff is gone, you’re done.

Next, sprinkle some flour out on your table or counter. Put the dough on the floured surface.

Then knead the dough 5 or 6 times. To knead, fold it in half, press it down, and turn the dough a quarter turn. Then fold again, press down and turn. Do this 5 or 6 times.

This is how the flaky layers are formed. When you’re done with the kneading, flatten the dough out with your hands into a uniform thickness of about ½ inch.

Now for the fun part: using a biscuit cutter, or a drinking glass, cut the biscuits out of the dough. If your cutter is sticking to the dough, dip it in some flour in between each cutting.  Carefully place the biscuits on a metal cookie sheet.

Take the remaining dough, and form it into a ball, knead it a couple times, flatten it out, and cut more biscuits.

OK,  here’s a secret for getting biscuits to rise sky high, as opposed to flat hockey pucks. And here it is.

Underneath all those refrigerator magnets, is the secret:  the fridge. Put the pan in the fridge for 10 minutes, before you put it in the oven. Don’t know the technicalities of why this works, but it does.  After 10 minutes, take the pan out of the fridge and put it in the oven.  Bake for 12-14 minutes or until a beautiful golden brown. Remove the pan from the oven, and immediately remove the biscuits from the pan.

Serve on a plate or serving bowl.

Remember the sky high flakyness I promised? Well here it is.

Cut them in half while still warm and slather with butter, jelly, apple butter, or anything that makes your taste buds happy. Once cooled, store remaining biscuits in a storage container to keep them from drying out.   They can be re-warmed in your microwave in about 10 seconds.

I remember: The Beginning of Spring!

There is absolutely nothing on this earth that can do more to put a spring in your step than to glance at the calendar and realize it is that famous day, just between March 20 and 21 when SPRING has arrived.

The season comes at just this opportune time when the days and nights are exactly equal in length. We have all agonized over a painful winter and cannot wait to enjoy the soft, scintillating breezes that signify we have made it once again.  The soft twitter of the robins refresh our winter-weary bodies with quick energy.  The colorful ground breaking of the tulips and crocuses help our eyes to once again focus on the beauty of life that surround us. The sunshine revs up the old motors in our aging bodies and we once again feel the renewed hope that spring brings upon us.

Many years this has happened to us who are older. It does mean we have made it to another Spring as we realize that since we made it this far, we are probably good for another year at least. Our minds are full of ideas and plans again and we wish we had time to carry them all out. By now, however, we realize, there will never be enough time to get everything done we have dreamed of doing.

Hubby will be planting his seed potatoes. They will need to be cared for.  The grass will begin to turn green, as it begins to grow once again. It will require mowing, and watering, and fertilizing. We will get it done, only to turn around and start over again. The weeds will come up and require pulling. While they are being pulled, the weeds will be growing in another area. The house windows will need to be washed and shined, some things repainted, carpets cleaned and floors shined. But one thing we can count on, it won’t stay done!

But wait a minute. Will we ever get everything done at once? What in the world would we look forward to if we finished all our work? Would we spend that time in a useful way if we had time on our hands or would we sit back and get completely lazy. What would happen to our ambition, or inventiveness, or new ideas if we always got to sit idly by and twiddle our thumbs?

They say “In spring, a young man’s fancy turns to love!” Is that for only a youth or can’t older people experience that excitement too? I think we feel it in a different, more contented way. As I thank God for my mate, I feel truly blest to have someone beside me in all my endeavors. How good to be able to discuss things that are happening in our lives with someone who knows me pretty well. Oh, certainly we are not exactly alike. We both have habits or traits that the other one doesn’t, but that’s what loving is all about. We love them anyways.

 

I used to think when Spring came upon me that now, with this extra energy, I would try to be the perfect mother, the perfect wife, the perfect Christian. Only to find that after awhile, I would flub up once again. It was discouraging.

 

Some of us who are getting older find it harder to walk with a spring in our step. It’s only when we feel enthused that we can accomplish that and even then, it’s difficult. It’s only when we take our eyes off of being the perfect person and leave ourselves open to simply following the way God leads us, that we can feel that energy that comes from “letting go and letting God.” And it is so much better for the stress level in our lives. Everyone has their strong points and talents, but no one has them all, so we can be content in the ones God gave us.

 

As we follow his path, we can take a little time when someone needs a little encouragement. As we also celebrate the first day of Spring, we can be ready to tell what it means that Christ died on the cross, by what it has meant to us. We don’t have to run around like a chicken with his head cut off, we can be at ease because we know, wherever he leads us, it is to our good.

 

As  Spring rolls around again, I want to spend some time alone with God and enjoy his presence. After that, I know I can walk with Spring in my step! If you are doing the same thing, let’s be sure and wave when we pass each other!

Westar Energy to host guided youth turkey hunts

TOPEKA — Green Team volunteers from Westar Energy invite youth age 12-17 to participate in their annual spring turkey hunt, April 1-14, 2015, at Jeffrey Energy Center (seven miles north of St. Marys). Hunts will take place primarily in the mornings and on weekends, but weekdays and afternoons are possible based on volunteer guide availability. Registration will be open through Friday, March 20, or until all slots are filled. Applications will be accepted on a first-come, first-served basis with preference for inexperienced mentors. Contact Barb Cornelius at (785) 575-8125 to apply.

Youth must be accompanied by an adult, preferably one who does not have turkey hunting experience. These trips will take place in enclosed blinds around small crop fields scattered through the plant’s property, where turkeys are abundant.

No special clothing, calls or decoys are needed, however hunters must bring a shotgun. Hunters 15 years and younger will need to purchase a youth spring turkey permit. Hunters 16 years and older must have a hunting license or apprentice hunting license, as well as a Unit 3 Turkey Permit.

The Westar Energy Green Team is made up of employees and retiree volunteers who take on environmental projects across Kansas. The group completes between 50 and 70 projects per year on weekends and evenings.
